From FKF – A Halal Recipes Treasure Trove

We are two close friends and business partners. Fauzia and Fozia. We share the same name, just spelt a little differently and live on opposite sides of the world. We come from relatively different backgrounds. One of us is of Yemeni Arab descent and grew up in East Africa whilst the other is of Pakistani origins and grew up in Canada. Whereas Fauzia is quite reserved and private, Fozia is more social and outgoing. This yin-yang ‘balanced duality’ makes working together for us absolute magic.

Fauzia’s Kitchen Fun, more commonly known by its acronym ‘FKF’, is a recipe source that was established in May of 2011.

FKF has a diverse, loyal and interactive following from all across the globe. The recipes being shared are from every nook of the world. They range from the more Western Hotdogs, Chicken Nuggets, Burgers and Fries to the quintessentially Desi spicy Biryani and Curries with Naan; from the signature Middle-Eastern Shawarma and Lahm Mandi to the flavourful Filipino Chicken Adobo; from the famous Japanese Chicken Katsu to the exotic Caribbean Jerk Chicken; from the renowned West African Jollof Rice to the celebrated East African Nyama Choma.

Today in FemAsia we are delighted to share Eight mouth-watering main Dishes from around the world.

Yakisoba (Japanese Stir-Fry Noodles)

Yakisoba is a delicious noodle stir-fry dish that is popularly sold as street food in Japan. It consists of noodles combined with some form of meat/chicken/seafood and vegetables, which are then all seasoned with a sweet and savoury sauce.

Arabian Laham Mandi

Mandi is an intensely flavourful, smoky and aromatic Yemeni/Arabic meal comprising mainly of rice that is topped with either meat, chicken or fish. This recipe is for the meat version, specifically tender mutton/lamb meat but you may substitute it with goat meat.

Caribbean Rice and Peas

This hearty meal (also known as rice and beans) is a rice dish that is most commonly cooked with either kidney beans or pigeon peas. The flavour is elevated by the addition of coconut milk, and I love to serve this with Jamaican style Jerk Chicken.

Chicken Adobo Philipines

This dish is one of the most famous Filipino staples and is known and loved all over the world. It is a simple vinegar and soy braised chicken dish that is usually served over plain white rice. As with all recipes, there are many variations. Here is how I like to make mine.

Loco Loco Moco Hawaiian

Moco is a delicious Hawaiian fast food dish consisting of plain rice topped with small burger patties, some crushed fried onions, brown gravy and a sunny fried egg. It has several components but is relatively easy to put together.

Nasi Goreng

Nasi Goreng is an Indonesian dish which literally translates to Fried Rice. It is popularly referred to as the Indonesian National Dish. In our opinion, this is one of the ultimate fried rice dishes, the flavour is simply incomparable. Although we prefer using both chicken and prawns in this dish, you could opt for just one or the other if you like.

Mexican cuisine began about 9,000 years ago and is very elaborate. This colourful and beautiful meal that is healthy, delicious and satisfying is a staple in Mexican cooking.

Chelo Kabab Koobideh Persian

The most popular and most famous of Iran’s Persian dishes. Beautiful, aromatic saffron-scented basmati rice (chelo) served with a pat of butter on top, some salad and grilled tomato, deliciously moist and flavourful grilled koobideh kebabs, with some soft-baked naan. The perfect combination of flavours and aromas.
